Plantain Pancakes


2 large ripe bananas
½ cup corn flour
½ teaspoon of salt
½ teaspoon of garlic
1 teaspoon grated fresh ginger
1 chopped spring onion
1 tablespoon of parsley
½ teaspoon of cayenne pepper or hot sauce


Mash the bananas with a potato or spoon masher until pureed.
In a medium bowl add the corn flour, salt, garlic, ginger and cayenne pepper to the banana puree. Add the onion and parsley and mix well.
Heat a pan with 3 tablespoons of oil.
Place in the pan ⅓ - 1/2 cup of dough and fry until both sides are golden brown, about 5 minutes on each side.
